Masoor dal with Sweet potatoes

In the instant pot, pressure cook masoor dal (PIP) with rice.

Manual 10 mins. NPR

For the tadka, add oil/ghee, jeera, rai, green chilies, minapappu, turmeric, hing and turn it off.

Add this to the dal and saute in the instant pot. Also add boiled sweet potatoes chunks.

(Next attempt, I am going to try adding spinach/kale leaves)

Stir for 2 to 3 mins and turn it off. Add cilantro.

Quinoa with mixed veggies and egg

Cook quinoa.

In the pan, add oil, add the frozen veggies, salt, pepper and sauté for some time.

Add cooked quinoa and little soy sauce and fry for some time. Then make a hole in the middle of the pan and add a couple of eggs, let them cook for some time and then scramble and mix it with the rest of the mixture 🙂

Instant Pot Hacks

Quick Boiled Egg Curry:

Add oil to the main pot. Saute onions, tomatoes, green chillies, add some tamarind, sesame paste, almond flour. Turn it off.

Put a trivet and eggs on top of it.

Manual 7 mins and QR.

Black Eyed Beans Curry and Quinoa (PIP):

Soak black eyed beans over night.

In the main pot, add oil, jeera, onions, tomatoes, jeera powder, little garam masala powder, chilli powder and the soaked beans.

Put a trivet. In a steel bowl, add quinoa with water(1:2).

Moong dal with spinach and Rice (PIP):

In the main pot, add moong dal, water, onions, green chilli and chopped spinach.

Put the trivet. In a steel bowl, add rice and water (1:2.5)

Manual 8 mins. NR

Mash the dal and add the tadka.

Scrambled eggs with Broccoli, Bell pepper and Spinach

Medium size Broccoli (florets)

3 eggs

1/2 cup baby spinach

1 green bell pepper

Procedure:

In cast iron pan, add oil and eggs. Let it cook for 2 to 3 mins and scramble them into good size chunks. Add salt & pepper. Take it into a plate.

Now add little oil and add broccoli florets and bell pepper and roast them till they are a little soft. Now add the egg back to the pan and add spinach. Cook for 2 mins and enjoy 🙂
